Voici comment proc\u00e9der<\/em><\/p>\n

    \n
  1. Faire chauffer le beurre dans une po\u00eale et y faire revenir les \u00e9chalotes jusqu’\u00e0 ce qu’elles soient tendres. Ajouter les champignons forestiers et faire revenir pendant 5 minutes.<\/li>\n
  2. Saler et poivrer, puis d\u00e9glacer avec le bouillon de l\u00e9gumes, la sauce d’hu\u00eetre et le cognac. Porter \u00e0 \u00e9bullition et r\u00e9duire en pur\u00e9e \u00e0 l’aide du mixeur plongeant.<\/li>\n
  3. Verser la soupe dans les verres.<\/li>\n
  4. Pr\u00e9parez 2 espressos et mettez-les ensemble avec la cr\u00e8me dans la seringue de cr\u00e8me fouett\u00e9e, secouez la seringue et ins\u00e9rez la cartouche.<\/li>\n
  5. Verser la mousse de caf\u00e9 sur la soupe et d\u00e9corer avec quelques champignons hach\u00e9s et de la ciboulette.<\/li>\n<\/ol>\n

    • 1 cuill\u00e8re \u00e0 soupe de cognac<\/li>\n
    • 2 tasses d’espresso<\/li>\n
    • 500 ml de cr\u00e8me<\/li>\n
    • 8 brins de ciboulette<\/li>\n
    • 500 grammes de champignons forestiers<\/li>\n<\/ul>\n
