Here’s how to make it
- Bring the 300 ml water with the sugar (300 grams) to a boil and add the coffee.
- Remove the skin from the pears and cut them in half (core out) place the pears in the coffee syrup (poach for 2 hours).
- Grind the hazelnuts with the sugar (15 grams) and lightly whip the 150 ml cream and mix in the hazelnuts.
- Place the pears on a pretty plate and serve a scoop of vanilla ice cream on top. Pour the coffee syrup over the top and place the hazelnut cream next to it.
