Here’s how to make it
- Preheat the oven to 150 degrees, place the meat on a plate and pat dry and sprinkle with salt and pepper. Heat the oil in a skillet and fry the meat over high heat.
- After cooking the meat, add the stock, espresso, halved shallots, the sliced carrots, sliced beets and rosemary to the boil. Cover and bake in the center of the oven for about 3 hours until tender.
- Garnish the stew with rosemary and the mashed potatoes.

- 1 kg sukadelappen
- 2 tablespoons of olive oil
- 500 ml beef stock
- 2 cups of espresso
- 5 shallots (cleaned and halved)
- 2 cloves of garlic (halved)
- 4 carrots
- 2 raw beets
- 3 sprigs of rosemary
- 1 lemon grated
- 1 tablespoon of honey
- Mashed potatoes
