Here’s how to make it

  1. Mix the butter with the pounded cookies and cinnamon. Spoon the mixture into the springform pan and press it into the bottom. Let it cool in the refrigerator.
  2. Sprinkle the gelatin into the cold water and let it stand for 5 minutes. Next, dissolve the gelatin au bain marie, stirring.
  3. Whisk together the yolks and sugar. Place the chocolate in a bowl with the coffee and stir until the chocolate dissolves. Then let the egg mixture thicken for 1-2 min over low heat and stir in the gelatin. Let this stand until it solidifies, stirring occasionally.
  4. Whip 1.5 dl cream and beat the egg whites until stiff. Fold first the cream and then the egg whites into the coffee mixture. Pour the mixture over the sponge cake base and refrigerate for 2 hours.
  5. Remove the cake from the refrigerator and top with whipped cream. Garnish with chocolate shavings and cinnamon.
