Cinnamon buttons with coffee glaze
Cinnamon buttons are great for coffee or tea.
But this version with coffee glaze is even better!

Here’s how to make it
- In a mixing bowl, combine 3 cups of flour, the yeast, brown sugar and salt. Add the milk, eggs and butter. Mix until the flour is fully incorporated. If the dough seems sticky, add a little more flour.
- Cover the bowl and leave outside the refrigerator for 10 min.
- Meanwhile, make the filling. In a bowl, combine 1 cup brown sugar and 1 tablespoon cinnamon. Preheat the oven to 375° degrees. Line a baking sheet with baking paper.
- On a floured surface, roll out the dough into a rectangle of about 16×14 cm, adding flour if necessary. Spread the dough with 5 tablespoons of butter and sprinkle with cinnamon sugar. Fold the dough in half directly over the cinnamon, pressing to make sure it sticks. Cut into 12-14 strips. Twist each strip into a loose knot; they don’t have to be perfect. Place on the baking sheet.
- In a bowl, mix 1 tablespoon melted butter, 1/2 cup brown sugar and 1 teaspoon cinnamon. Sprinkle lumps of the brown sugar over the buttons. Bake for 20 min, until golden brown.
- Meanwhile, make the icing. Melt the butter and maple syrup together in a small saucepan over medium-high heat. Remove from heat and whisk in the powdered sugar and instant coffee. Sprinkle over the buttons.

- 2 tablespoons of brown sugar
- 1/2 teaspoon salt
- 1 cup of warm milk
- 3 large eggs
- 4 tablespoons of salted butter

- 1 tablespoon + 1 teaspoon of cinnamon
- 6 tablespoons of salted butter
Coffee glaze
- 4 tablespoons of salted butter
- 1/3 cup maple syrup
- 1 cup powdered sugar
- 1 teaspoon of instant coffee
