Enchiladas with coffee

This appetizer may seem like a lot,
but cut the tortillas in half and you have a delicious savory dish.
Try this recipe!
Tip: Do you have too much? use it for drinks.
12 small tortillas – 30 min preparation.

Here’s how to make it

  1. Preheat the oven to 175 degrees
  2. Chop the tomatoes and finely chop the peppers and garlic. Fry the minced meat and season with spices, when minced meat is discolored add the peppers and garlic. Fry this briefly and then add the tomatoes, sugar and coffee. Let this simmer for 10 minutes and add a little coriander.
  3. Mix the cheese and mozzarella, but keep 1/3 aside for garnish. Remove the tortillas from packaging and spread with the sauce and spoon the meatloaf mixture on top, with a little cheese.
  4. Place the enchiladas in a baking dish. Pour the final sauce over it and garnish with the cheese. Bake in the oven at 175 degrees for about 20 minutes until the cheese melts well.
  5. Cut each tortilla in half, making a tasty savory appetizer or as a snack.

 

Ingredients

  • 200 grams of grated cheese
  • 200 grams of grated mozzarella
  • 500 grams of minced beef
  • 2 red peppers
  • 4 cloves of garlic
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon of dried oregano
  • 2 tomatoes
  • Handful of fresh cilantro
  • 1 tablespoon of sugar
  • Salt
  • 100 cc of coffee
  • 12 small tortillas
